To harvest edible portion: Leaves, flowers, and fruit are all edible. The fruit is best when the outside is wrinkly, the pulp will be yellow. (Fruit stays green even when ripe)
To harvest seeds: Allow to mature on the plant, when the fruit is wrinkly, harvest. You can gently pulse seeds in a blender to remove pulp, don’t over do it or you’ll chop the seeds up. OR allow the seeds with the pulp to dry (on a towel or paper towel) then flake off the pulp once dry.
