Beet Lemon Bars

Crust:

1/2 cup butter, melted

1 cup flour

1/4 cup powdered sugar

Lemon curd:

1/2 cup lemon juice (2-3 lemons)

zest of lemons

3 eggs

1/2 cup flour

1 1/2 cup sugar

1 teaspoon vanillla

1 teaspoon almond extract

1 cup beet marmalade (recipe here)

Instructions:

Preheat oven to 350°F, prepare an 8 x 8 baking pan with parchment paper

  1. Combine dry crust ingredients, then add in melted butter, combine until well mixed.

  2. Press into 8 x 8 pan until even

  3. Bake 15-20 minutes or until golden brown

  4. Prepare lemon curd: Combine lemon juice, lemon zest, eggs, sugar, vanilla, almond extract, and all purpose flour with a hand mixer until well blended.

  5. Once the shortbread is slightly cooled cover it with a layer of beet marmalade.

  6. Then cover with the lemon mixture.

  7. Bake for about 25- 30 minutes or until the center is slightly jiggly.

  8. Allow to cool, dust with powdered sugar, cut and enjoy!
