Beet Marmalade

2-3 beets, grated

1/4 cup fresh lemon juice

1 cup sugar

2 tablespoons fresh ginger, finely minced

splash almond extract

1 teaspoon cornstarch

Instructions: Combine all the ingredients, except the cornstarch, into a medium pot. Cook over med heat until the mixture begins to bubble and and the beets soften. Dissolve cornstarch in a small amount of water and then add to pot. Continue cooking until the mixture begins to thicken. Use on biscuits, the beet lemon bars, or however you want.
