Nopal + Bean Salad
Ingredients:
1 onion, diced
1 red bell pepper, diced
2 cups beans*
1 cup nopales, diced
1 cup cherry tomatoes, diced
1 bunch cilantro, minced
2 tablespoons oil of choice
Salt and pepper to taste
Chili Oil:
12 chiles de árbol, stems removed
6 cloves of garlic
2 tablespoons oil of choice
*We used pinto and white tepary beans, but you could use just pinto, just white, black, garbanzos, whatever you like.
Instructions:
Combine onion, bell pepper, nopales, tomatoes, cilantro, beans, and oil in a bowl, stir to combine.
Saute garlic in oil until it begins to brown. Remove garlic, then add chiles, sautee until soft and fragrant. Blend together, add salt and pepper to taste.
Pour chili oil over bean mixture (to taste), stir until well mixed. Enjoy!
This salad is good alone, with chips, or on tortillas with green onions. We also added sunflower sprouts. It’s perfect for a summer day, filling, but not hot (temperature).
