Citrus and Jicama Salad

Makes A LOT (perfect for a party, or something easy to prep and eat for days)

Ingredients:

1 medium jicama, peeled, and sliced into bite sized pieces

1 dragon fruit, cut into chunks

2-3 oranges, peeled, and cut into chunks

2-3 tangleos, peeled and cut into chunks

1 bunch of cilantro, finely minced

1/4 cup lime juice, plus more for jicama

1/4 cup grapefruit juice

Tajin to taste (optional)

Instructions:

Prep in a large jicama and toss with lime juice to prevent browning while you prep the other fruits. Add the dragon fruit, oranges, tangelos, and cilantro, mix well. Pour the lime and grapefruit juices over the mixture and mix. Sprinkle with Tajin to taste and serve. Enjoy!

This salad is bright and refreshing, especially in these summer days. But be mindful that the dragonfruit contains A LOT of fiber, so eat in moderation. OR you could enjoy as a refreshing way to clean your body out.
